- 10 rice paper wrappers (brown or white, I love Banh Trang brand)
- 2 cups sliced carrots (thinly)
- 1 handful fresh cilantro
- 3 tablespoons tamarind concentrate (I love this brand)
- 3 tablespoons tamari soy sauce (+ more for tofu)
- 4 tablespoons coconut sugar (or maple syrup, or sub brown sugar or honey if not vegan)
- 1/2 lime (juiced, ~1 Tbsp, 15 ml)
- 2 teaspoons garlic chili sauce (I love this brand + more for tofu)
- peanut sauce (/ Almond Sauce / Cashew Sauce)

Absolutely delicious! Add some bean sprouts or switch out the veggies based on preference or availability and you've got a winner!

Really really tasty - that sauce is amazing! I subbed out the tofu and added beansprouts into the noodles, exchanged the cilantro for mint and added in cucumber. Best fresh rolls I've ever made. Yum.
