  • 300 grams basmati rice
  • 1/2 cup ghee (seems like a lot but trust me on this)
  • bay leaf
  • star anise
  • cardamom
  • spices
  • 4 cups onions (sliced)
  • 5 green chillies (adjust to taste)
  • 2 inches ginger (piece of)
  • 6 cloves garlic (note that Indian ones are smaller in size so use fewer if using the larger kind)
  • coriander leaves (A fistful of)
  • mint leaves (A fistful of, I didn't have any)
  • 300 grams chicken drumsticks (or any pieces you prefer)
  • 1/2 teaspoon turmeric powder
  • 1 1/2 tablespoons Biryani Masala (we use and like Eastern brand)
  • 3 tablespoons curd (plain)
  • 200 milliliters coconut milk (thick)
  • 1/4 cup cashew nuts
