Description

Potatoes, breadcrumbs and eggs help bind this flavorful meatloaf, made from ground beef and finely chopped mortadella. It's seasoned with Parmesan and nutmeg. Covered in white wine and sealed before baking. During the last 15 minutes of cooking, the foil is removed so it can brown, and tomatoes, peppers and celery are added to the dish. If you have happen to have leftovers, turn them into a sandwich by suffing the meat between slices of crusty bread.

Ingredients

  • 200 milliliters water
  • 200 grams flour (sifted)
  • 100 grams vegetable oil
  • 4 eggs
  • salt
  • vin santo
  • ground cinnamon
  • powdered sugar

Directions

  1. Preheat the oven to 160C.
  2. Place the water in a medium saucepan, add the oil and a pinch of salt.
  3. As soon as the water begins to boil, remove the saucepan from the stove and add the flour all at once, stirring quickly. Incorporate the eggs, one at a time, while continuously stirring.
  4. Add the ground cinnamon. If the dough is too soft, add some flour.
  5. Place spoonfuls of the batter on a baking sheet, leaving a space between each.
  6. Bake for approximately 20 minutes until golden and puffed.
  7. Remove the baking sheet from the oven and cool.
  8. Dip the fritters in the wine and then coat them with the sugar.
