Description

Potatoes, breadcrumbs and eggs help bind this flavorful meatloaf, made from ground beef and finely chopped mortadella. It's seasoned with Parmesan and nutmeg. Covered in white wine and sealed before baking. During the last 15 minutes of cooking, the foil is removed so it can brown, and tomatoes, peppers and celery are added to the dish. If you have happen to have leftovers, turn them into a sandwich by suffing the meat between slices of crusty bread.

Ingredients

200 milliliters water
200 grams flour (sifted)
100 grams vegetable oil
4 eggs
salt
vin santo
ground cinnamon
powdered sugar

Directions

1Preheat the oven to 160C.
2Place the water in a medium saucepan, add the oil and a pinch of salt.
3As soon as the water begins to boil, remove the saucepan from the stove and add the flour all at once, stirring quickly. Incorporate the eggs, one at a time, while continuously stirring.
4Add the ground cinnamon. If the dough is too soft, add some flour.
5Place spoonfuls of the batter on a baking sheet, leaving a space between each.
6Bake for approximately 20 minutes until golden and puffed.
7Remove the baking sheet from the oven and cool.
8Dip the fritters in the wine and then coat them with the sugar.
