Ingredients

  • apples (Reinette variety)
  • 12 almonds (coarsely chopped)
  • 100 grams biscuits (speculoos)
  • 50 grams softened butter
  • 30 grams brown sugar
  • apple juice (15 cl.)

Directions

  1. Preheat oven to 200 degrees Celsius.
  2. Hollow out the apples with an apple corer without peeling. Crush the biscuits with a pestle (or use a blender), add the butter, almonds, and brown sugar.
  3. Mix all these ingredients with a fork.
  4. Place the apples in a baking tray, and fill them with generous amounts of the mixture.
  5. Sprinkle with apple juice, and baking for about 20 minutes, basting after 10 minutes.
  6. Serve warm.

Baking the apples in the oven allowed them to simmer in their own juices and maintain that sweet flavor. They crusted over the top and made a great addition to the speculoos.
