Ingredients

3/4 head iceberg lettuce (washed and chopped)
1 cucumber (medium, diced)
1/3 cup cilantro (minced)
1 carrots (julienned)
2 tablespoons toasted peanuts
2 scallions (white section sliced and green section minced)
1 tablespoon olive oil
2 tablespoons orange juice
1 tablespoon white vinegar
1 teaspoon ginger (grated)
1 teaspoon soy sauce
salt and ground black pepper

Directions

1Whisk together the olive oil, orange juice, vinegar, ginger, soy sauce, salt, and pepper. Set aside.
2Place the lettuce, cucumber, cilantro, carrot, and the white section of the scallions into a bowl and toss. Add the dressing and mix to coat the salad evenly.
3Place each half of the salad onto a serving dish and sprinkle with peanuts and the green section of the scallions.
