Flavored with dijon mustard, fresh oregano, and chopped garlic, this Oregano and Garlic Mayonnaise is full of your favorite herb flavors. Ingredients

  • 1 tablespoon dijon mustard (with honey)
  • 2 eggs
  • 2 tablespoons rice vinegar
  • salt
  • 250 milliliters peanut oil
  • 2 garlic cloves
  • oregano (to taste)

Directions

  1. Blend the mustard, eggs, vinegar, a pinch of salt, and 85 milliliters of peanut oil for about 10 seconds.
  2. Add the remaining oil little by little, blending for another 10 seconds, until mixture is soft and creamy. If the mixture is too oily, add a little water, and mix a bit more.
  3. Chop the garlic and oregano, and mix with the mayonnaise.
  4. Refrigerate until serving.

This is a great spice up for an everyday condiment. I have been using this recipe since I discovered it and love the mayonnaise taste mixed with the garlic flavor.
