Description

These cupcakes are the perfect way to celebrate an upcoming birthday or other occasion. The cake is lightly flavored with vanilla and orange or a fragrant and flavorful dessert. The frosting for these delicate little cakes is made of mascarpone for a slightly tart addition. A touch of vanilla and powdered sugar add a little sweetness to the cheese, making for a perfecct balance between the frosting and the cake.

Ingredients

  • 3 eggs
  • 150 grams brown sugar
  • 150 grams butter (melted)
  • 1/2 orange
  • 200 grams flour
  • 150 grams mascarpone
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Directions

  1. 1Preheat oven to 400 degrees Fahrenheit.
  2. 2Whisk the eggs with the sugar until the mixture whitens.
  3. 3Add the melted butter, the juice and the zest of half an orange. Mix well.
  4. 4Add the flour gradually in increments.
  5. 5Fill in the cupcake cups with the batter until 2/3 full.
  6. 6Bake for approximately 25 minutes.
  7. 7Once the cupcakes are cooled, prepare the icing: mix the mascarpone with the powdered sugar and vanilla extract. Put this mixture into a piping bag and decorate as you wish! You can even add a half slice of crystallised orange on top if you like.
