Grated lemon zest gives the dough for this Italian-style tart a hint of citrus, which complements the orange marmelade that's mixed into the filling and is also used as a garnish. The creamy ricotta filling also includes chocolate chips. If desired, save some of the dough to use to decorate the top of the tart and use the rest to line the pan. This tart is best when allowed to chill overnight before serving.

Ingredients

  • 1/2 lemon
  • 210 grams sugar
  • 180 grams flour
  • 2 eggs
  • 100 grams butter (soft, pieces)
  • 1 teaspoon baking powder
  • 250 grams ricotta
  • 100 grams orange marmalade
  • chocolate chips

Directions

  1. Using a stand mixer, add the lemon zest and 870 grams of sugar and mix well using a paddle attachment.
  2. Add the flour, 1 egg, butter, and baking powder and mix well.
  3. Add the dough to a bowl, cover with plastic wrap, and allow to rest in the refrigerator for at least 1 hour.
  4. In another bowl, mix the ricotta with the remaining sugar, egg, marmalade, and chocolate chips.
  5. Preheat the oven to 170 degrees Celsius.
  6. Roll out the dough and grease and flour a 22-centimeter diameter pastry pan.
  7. Add the filling, smooth the surface and decorate with strips of pastry.
  8. Bakefor 25 minutes.
  9. Serve cold, sprinkled with powdered sugar and garnished with orange marmalade.

This is a sweet dish that could be served as a dessert for a brunch. It is pretty and flavorful. It takes a little extra time to make the crust, but the flaky texture of it makes it worth it. I added some mint leaves as a garnish on the top and it looked beautiful. I will make it again for our next family get-together.
