This colorful dish can be served as an appetizer or a main coarse. The peeled oranges add a sweet flavor to the salad. Mixed together the cheese compliments the oranges, while the vinegar evens out the flavor.

  • lettuce
  • 1 orange
  • goat cheese
  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • salt
  • ground black pepper

Directions

  1. Add the lettuce to a salad plate.
  2. Peel the orange, cut into segments, and place atop the lettuce.
  3. Cut the cheese and add to the salad.
  4. Add the oil and vinegar to a small bowl. Add a pinch of salt and black pepper and whisk. Dress the salad to taste.

Sweet and savory all at the same time. Delicious!! This will be a go to salad in my salad lunch rotation. I love finding a new recipe for a dish that I look forward to eating all morning.
