Easy to make and ready in an hour, this gluten free orange and cottage cheese pie is low in calories and high in creamy citrus flavor. All that is required is an electric mixer, a bowl, and a pie tin.

Ingredients

  • 4 eggs (separated)
  • 200 grams cottage cheese
  • 140 grams sugar
  • 1 orange juice (medium, and zest)
  • butter (for greasing)
  • powdered sugar (for dusting)

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. Grease a small cake pan with margarine.
  3. Whisk the egg whites with a pinch of fine salt until stiff. Set aside.
  4. In another bowl, use a fork to mash the cheese.
  5. Add the egg yolks and the sugar and beat well with a whisk, or an electric mixer.
  6. Add the orange juice and zest, and beat again.
  7. Add to this batter, a tablespoon of beaten egg whites, and mix gently.
  8. Add the remaining egg whites with a spoon, gently mixing from top to bottom.
  9. Pour in cake pan, and bake for about 30 minutes, until browned.
  10. Allow to cool inside the oven with the door ajar.
  11. When cold, sprinkle with powdered sugar.

Great recipe. Made this last week and the family loved it. It was something different for us so I am happy we enjoyed the results. Thanks for sharing. I’m gonna have to make this again sometime.
