Rich in orange flavor and color, this Orange and Carrot Jelly is the perfect spread for a freshly baked loaf of bread. Or you may just find yourself eating it by the spoonful. Made with fresh oranges and carrots, this jelly also has a splash of lemon juice for a refreshing citrus flavor. The ingredients are easily combined in the blender and then heated with agar to thicken to your preferred consistency. Be sure to refrigerate until ready to serve.

Ingredients

  • 4 oranges
  • 1 carrot (small)
  • 1 lemon
  • 100 grams sugar
  • 60 grams water
  • 2.5 grams agar agar (found in health food stores or Asian markets, may use gelatin powder as substitute)

Directions

  1. Peel the oranges and carrots and place them in the blender.
  2. Mix together the lemon juice and the sugar, and add it to the blender
  3. Blend on high for approximately one minute.
  4. Add the water and blend for another 15 seconds on high.
  5. Pour the ingredients into a saucepan and cook for approximately five minutes, stirring frequently.
  6. Then stir in the agar agar (or gelatin powder) and cook for another five minutes, continuing to stir.
  7. Pour the mixture into jars or glass cups.
  8. Let cool and place in the refrigerator until it is time to serve.

The color of this jelly is so bright and pretty. It tastes wonderful too. We have spread this on toast, used it in sandwiches and the baby enjoys it by the spoonful.
