  • 2 lb. boneless ribeye (rib) pork roast
  • 3/4 cup orange marmalade
  • 2 Tbsp. lemon juice
  • 1/2 tsp. ground ginger
  • 1/2 tsp. dry mustard

    Directions

    1. Roast pork in shallow pan in 350 degree F. oven for 40 minutes (about 20 minutes per pound).
    2. Meanwhile, stir together remaining ingredients for basting glaze. Baste occasionally with glaze the last 20 minutes of cooking time, until internal temperature on a thermometer reads 145 degrees F. Remove roast from oven; let rest about 10 minutes before carving.
