Ingredients

  • 1 jar olives (medium large)
  • 25 milliliters extra-virgin olive oil
  • 40 milliliters vin santo (may substitute with a sweet dessert wine)
  • orange juice
  • orange zest (untreated)

Directions

  1. Rinse the olives well to completely remove the brine.
  2. Mix the oil in a bowl with the vin santo and the juice of 1/2 orange.
  3. Add the mixture to the olives and garnish with the orange zest.
  4. Place the olives in an airtight container.
  5. Refrigerate for at least 24 hours, occasionally shaking the container.

I opted to use a sweet peach dessert wine instead of the vin santo. The olives work as a quick snack and are yummy to slice up in a salad. I have also used them on a turkey, whole wheat bread, cream cheese and provolone cheese sandwich. They are handy to keep in the fridge.
