With a cinnamon spiced topping, these citrus cupcakes will delight the tastebuds. Flavored with fresh orange juice and orange zest, these cupcakes are packed with orange flavor. Made with both white and brown sugar, these cupcakes have the perfect balance of sweetness. No mixer necessary.

Ingredients

  • 50 grams margarine (softened)
  • 50 grams vegetable oil
  • 100 grams white sugar
  • 80 grams brown sugar
  • 2 eggs
  • 1 orange juice (and zest)
  • 320 grams flour
  • salt
  • 1 teaspoon baking powder
  • 200 milliliters milk (warm)
  • granulated sugar (to taste)
  • cinnamon (to taste)

Directions

  1. Preheat oven to 200 degrees Celsius
  2. Line the cupcake pans with paper liners. Place the pans on an oven tray. Set aside.
  3. In a bowl mix the margarine, oil, and sugars until creamy.
  4. Add one egg at a time, and mix until everything is combined.
  5. Add zest and orange juice, mix well.
  6. In another bowl combine the flour, salt, and baking powder. Mix.
  7. Add the flour mixture and milk alternately, until finished.
  8. Keep whisking, without beating.
  9. Use a spoon to fill the muffin cups 3/4 full.
  10. Before placing in the oven, sprinkle with granulated sugar and cinnamon powder to taste.
  11. Bake for 20 minutes until golden and fluffy.
  12. Remove from oven and let cool slightly.
  13. Unmold and serve with orange juice.

This is moussaka at it best! When simple flavors combine this well you know you have a homey and hearty dish from oven to table. Since I know just one other person that loves eggplant, as I do, I take her a generous pan of it every time I make some for our family. All that is needed is a quick side of berries and slice of heavy bread and dinner will “stick to your ribs” in the tastiest of ways!
