These gluten free coconut cookies combine the sweetness of coconut with the lightness of orange. Perfect for an after dinner treat or an afternoon snack. Perfect for spring when the sun starts to make its appearance again.

Ingredients

  • 200 grams grated coconut
  • 160 grams sugar
  • 4 small eggs
  • 2 oranges (juice and zest)
  • cupcake (Paper, liners)

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. Place about 25 cupcake liners on a baking tray.
  3. Whisk the eggs with the sugar in a bowl. Add the zest of two oranges, and the juice of one of orange. Whip again.
  4. Add the grated coconut, and mix well.
  5. Spoon the dough into the cupcake liners, and bake for about 15 minutes. Do not let them dry out.
  6. When they begin to brown, remove from the oven, and sprinkle each cookie with a teaspoon of orange juice from the second orange.
  7. Serve.

Great cookie recipe. I just love how the orange and coconut work with each other. It’s just the right amount of sweet, nutty, and zesty. Very delicious. Thanks for sharing. I'll have to jot this down in my recipe book.
