A unique orange cake that is the perfect accompaniment to an afternoon cup of tea or glass of milk. Made with grated coconut, orange juice and zest, and port wine, this cake is a combination of warm fruity flavors with a moist texture.

Ingredients

  • 200 grams margarine
  • 200 grams sugar
  • 4 eggs
  • 1 orange juice (and zest)
  • 1 port wine (chalice)
  • 3 tablespoons grated coconut
  • 300 grams flour
  • 1 teaspoon baking powder
  • 2 tablespoons sugar (for sprinkling)

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. Grease a bundt cake pan with margarine, and sprinkle with flour. Set aside.
  3. Begin by slightly softening the margarine in the microwave.
  4. Afterwards, add sugar, and mix well until it forms a homogeneous cream.
  5. Add the eggs, one at a time, and beat between each addition.
  6. Add the orange zest, orange juice, and the Port wine. Mix again.
  7. Add the coconut, flour, and baking powder, and mix until well blended.
  8. Pour the batter into the pan. Sprinkle with two tablespoons of sugar.
  9. Bake for about 40 minutes.
  10. Check the cooking with a toothpick, remove, unmold, and let cool.

Fantastic recipe! I think the wine is what makes the cake taste so good. Very moist, not too heavy, not too light either. Just the right amount of sweet and zesty. I know this recipe is about to get me in trouble. It’s been added to my list of comfort foods.
