Description

A unique orange cake that is the perfect accompaniment to an afternoon cup of tea or glass of milk. Made with grated coconut, orange juice and zest, and port wine, this cake is a combination of warm fruity flavors with a moist texture.

Ingredients

200 grams margarine
200 grams sugar
4 eggs
1 orange juice (and zest)
1 port wine (chalice)
3 tablespoons grated coconut
300 grams flour
1 teaspoon baking powder
2 tablespoons sugar (for sprinkling)

Directions

1Preheat oven to 180 degrees Celsius.
2Grease a bundt cake pan with margarine, and sprinkle with flour. Set aside.
3Begin by slightly softening the margarine in the microwave.
4Afterwards, add sugar, and mix well until it forms a homogeneous cream.
5Add the eggs, one at a time, and beat between each addition.
6Add the orange zest, orange juice, and the Port wine. Mix again.
7Add the coconut, flour, and baking powder, and mix until well blended.
8Pour the batter into the pan. Sprinkle with two tablespoons of sugar.
9Bake for about 40 minutes.
10Check the cooking with a toothpick, remove, unmold, and let cool.
