Made with fresh orange juice and zest, this no butter cake is bursting with citrus flavor. Soft and moist, this cake is then covered with a sweet orange icing. A great cake for the wintertime.

Ingredients

  • 6 eggs
  • 1 1/2 cups sugar
  • 1 1/2 cups flour
  • 1 cup oil
  • 1 orange juice (and zest)
  • 240 milliliters tea
  • 1 teaspoon baking powder
  • 225 grams powdered sugar
  • 1 orange juice

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. Grease a bundt pan with margarine and sprinkle with flour. Set aside.
  3. Separate the egg yolks from the egg whites, and whip the whites stiff. Set aside.
  4. Pour the sugar and flour in a bowl.
  5. Add the egg yolks, and whisk.
  6. Add the oil, orange juice, orange zest, tea, and baking powder. Whisk until obtaining a smooth cream.
  7. Add the egg whites, one scoop at a time, to gradually release the dough. Stir with a spoon from the bottom upwards, without beating.
  8. Place the dough in the pan, and bake for 40 minutes.
  9. Remove from the oven, unmold, and let cool.
  10. For the icing, mix the powdered sugar and the orange juice. Spread on cake after it cools.

I loved the cabbage, sausage and bacon grease in this dish! A twice baked potato with this much flavor and hearty ingredients is a meal in itself. I use large baking potatoes and make two halves each for my teenage sons. This is a no fuss meal I know they will enjoy every time!
