  • 4 ounces boneless pork chops (thin)
  • 4 eggs
  • 4 teaspoons butter
  • 2 English muffins (halved)
  • 1 head lettuce (such as little gem or romaine)
  • 2 tomatoes (sliced)

Directions

  1. Heat 2 tbsp oil in a non-stick frying pan, season pork and sear for about 3 mins, turning, until cooked through. Meanwhile, heat remaining oil in a separate frying pan and fry eggs. Season. Butter English muffins then top with lettuce, tomatoes, pork and a fried egg.
