  • 6 tablespoons butter
  • 3 red onions (thinly sliced)
  • 1/2 cup sour cream
  • 1/4 cup sun dried tomatoes (chopped)
  • 1/2 teaspoon thyme leaves
  • 2 sheets frozen puff pastry (thawed)
  • 4 eggs (poached)

Directions

  1. Melt butter in a medium skillet on low heat. Add onion and cook gently for 15 mins until beginning to brown. Stir in sour cream, tomatoes and thyme.
  2. Preheat the oven to 400°F. Cut four 5-inch rounds from pastry. Place on a parchment paper lined baking sheet. Prick each round with a fork.
  3. Bake for 5 mins. Spread evenly with onion mixture. Bake 8-10 mins longer until puffed and golden. Serve topped with a poached egg
