Description

There's no reason not to make French onion soup at home, when it's so easy to do. You start by caramelizing sliced onions in butter until nicely browned, which will lend the soup color, and then simmer with stock to develop the flavors. Then it's just a matter of topping each serving with a piece of toast, sprinkling liberally with grated cheese, and placing in a hot oven or under the broiler for a few minutes to melt the cheese.

Ingredients

  • olive oil
  • 2 tablespoons butter
  • 6 onions
  • 1 clove garlic
  • 1 liter chicken broth
  • toast
  • cheese (grated)

Directions

  1. 1Melt the butter and the oil in a saucepan.
  2. 2Julienne the onions and garlic. Cook in the oil and butter, the golden brown butter and oil will give color to the soup.
  3. 3Add enough chicken broth to cover the onions and cook for 15 minutes.
  4. 4Serve in a bowl and add a piece of toast on top.
  5. 5Add grated cheese to cover the soup and toast and place the bowl in the oven for a few minutes until the cheese melts.
