Ingredients

  • 1 tablespoon olive oil
  • 2 yellow onion (sliced)
  • salt
  • ground black pepper
  • 1 clove garlic (chopped)
  • 1 teaspoon fresh rosemary (chopped)
  • 2 whole wheat pita bread
  • 50 grams feta cheese (or goat cheese)
  • 50 grams manchego cheese (grated)
  • 6 black olives (sliced)

Directions

  1. Preheat the oven to 200 degrees Celsius.
  2. Heat the olive oil in a hot saucepan. Saute the onions for 15 minutes until golden brown, stirring occasionally. Season with salt and pepper to taste.
  3. Add the garlic and rosemary, then cook for 1 more minute. Remove from the stove.
  4. Warm the pita breads. Add the onion mix, cheeses, and olives on top.
  5. Bake at 200 C for 10 minutes, or until the cheese melts.
  6. Remove from the oven, cut into slices, and serve.
