Ingredients

1 tablespoon olive oil
2 yellow onion (sliced)
salt
ground black pepper
1 clove garlic (chopped)
1 teaspoon fresh rosemary (chopped)
2 whole wheat pita bread
50 grams feta cheese (or goat cheese)
50 grams manchego cheese (grated)
6 black olives (sliced)

Directions

1Preheat the oven to 200 degrees Celsius.
2Heat the olive oil in a hot saucepan. Saute the onions for 15 minutes until golden brown, stirring occasionally. Season with salt and pepper to taste.
3Add the garlic and rosemary, then cook for 1 more minute. Remove from the stove.
4Warm the pita breads. Add the onion mix, cheeses, and olives on top.
5Bake at 200 C for 10 minutes, or until the cheese melts.
6Remove from the oven, cut into slices, and serve.
