Ingredients

  • 120 grams flour
  • 4 white onions (large, sliced finely and sauteed)
  • 4 eggs
  • 2 tablespoons chives
  • 1 teaspoon baking powder
  • 5 tablespoons grated parmesan cheese
  • 2 cups milk
  • sugar
  • ground nutmeg
  • salt (as needed)
  • ground black pepper (as needed)

Directions

  1. Preheat the oven to 180C.
  2. Place the sifted flour, baking powder, salt, and a pinch of sugar in a bowl.
  3. Beat the eggs lightly and add them to the bowl, add the milk so the mixture is uniform in consistency.
  4. Incorporate the cheese, chives, nutmeg, and a pinch of pepper.
  5. Add the onions.
  6. The dough should not be too liquid nor too firm.
  7. Place the dough in a loaf pan, filling it halfway.
  8. Bake for 50 to 60 minutes.
  9. Remove the cake from the oven and cool.

Nutmeg and parmesan add interest to this savory cake. Four large, sautéed onions plus chives could be overpowering, but using milk in the batter should sweeten them. A perfect Autumn comfort food with some sharp cheese and olives on the side.
