yuuuuummmmmmy! It was even better without the enchilada sauce, or just a little for flavor. To save time I cooked the tortillas whole while the veggies cooked, and chopped them up before adding them to veggies. Will make again!!

I changed it up a bit. I used kidney beans (I def thought I had black beans??? Ugh!) and used beef as well. The hubby didn’t buy any grated cheese, so I ended up using a combo of velveeta and nacho cheese. Ok, so I made it pretty unhealthy, but it’s still delicious.

loved it! Entire family, kids and all. They didn't even realized there was no meat. I did add a extra cup of cheese, 1/2 cup the first and extra 1/2 on the top. I am saving this recipe.

This turned out awesome! Loved the flavor and texture of the corn tortillas mixed in. My store was out of zucchini so I subbed diced sweet potatoes that were roasted in the oven first. Worked out great!
