    Left out the zucchini because it’s zucchini and no one like it. Meal was great and everyone enjoyed it, nice amount of spice.

    A bit tooo spicy, but the combination definitely works! I'd also recommend non-vegans to add some sausage, it goes well.

    I sautéed the rice with the onions and peppers and it came out delicious . I added black and pinto beans to the mixture and dropped the zucchini . With the addition of more cheese than required this will make a great nacho or bean dip with chips

    Came out great! I used brown rice and that definitely added time (probably another half hour) but it was still delicious!

    Added a small amount of ground beef, halved everything else. Brown rice pre cooked, I was afraid it would be to starchy as written. Very fresh tasting, we liked it!
