  • 1 teaspoon thyme (ideally fresh, but dried will do)

  • 8 chicken thighs (or legs bone in and skin on)
  • 2 tablespoons olive oil (for frying)
  • 4 spring onions (sliced finely)

  • 1 chicken stock cube (I use Kallo organic)
