  • 1 1/2 pounds skinless boneless chicken breasts (cut into bite-sized cubes)
  • 2 tablespoons curry powder (use yellow curry powder for milder or red for spicier)
  • 3 cloves garlic (finely minced)
  • 1 white onion (cut into strips)
  • 1 can coconut milk (lite or regular)
  • 1 red bell pepper (seeded, stemmed and cut into strips)
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil
  • 1 teaspoon ground turmeric
  • 1 1/2 tablespoons coconut palm sugar (or honey)

    Although it was a quick curry to make and tasted good, i found it to be of a watery consistency type of curry, wasnt so much as a thick curry as i was expecting. i made some coconut rice and popadoms to go with this.

    This was pretty good. It needed some more salt after adding the coconut milk to bump up the flavor, but it was pretty good still. I also made a sweet coconut rice to serve with it.

    Really nice, easy to make curry. I didnt need to buy anything outside of what i have in my pantry to make it which i appreciate in a dish. I added half a can of like coconut cream to make it creamier and added the rest to my rice (with a little sugar and salt) to make coconut rice

    There’s nothing particularly wrong with this recipe besides the fact that it is almost completely flavorless. It was easy to make but I am going to try this recipe again with my own addition of spices to see if I can make it more flavorful. Following this recipe I was disappointed with how bland the dish came out.

    This quick and easy curry turned out beautifully for me. I made it with light coconut milk, half mild curry powder and half hot curry paste (Patak's) and it was just right for me.

    This was really easy and delicious, the only thing was that the sauce was a little thin. I even simmered it longer than the directions in lieu of adding flour to thicken the sauce. Any suggestions on how to thicken the curry sauce?

    I shared this with my boyfriend, and he cooked it for us tonight. I added red curry paste. The coconut milk did separate when boiled, so it wasn'tas creamy as I'd hoped. Otherwise it was yummy (I added an extra dash of salt to my plate)

    Fairly good, I wasn't able to find a curry paste (used a red curry powder instead) it was still nice, but lacked some complexity. Adding salt did help! Very easy to cook though, I'll definately make it again (with paste this time!!)

    We loved this! We didn't have bell pepper so I subbed in broccoli. We have two little ones so spicy isn't our thing during this stage of life (unfortunately). This was definitely a mild curry but delicious none the less! Our two-year-old ate his entire plate then finished his big sister's! Hubby and I loved it, as well. Very easy to prepare so great for busy weeknights.

    Fairly easy to prepare, but I found it a bit disappointing. Would like it to be spicier and it turned out much saucier than the photo suggests. I wouldn’t NOT make it, but am unlikely to return to it.

    I omitted the peppers, and turmeric, because I thought I had them, but didn’t. I did add frozen peas in close the end of the chicken cooking. Super good. I paired the chicken with coconut rice:

    This was easy to make...was good but found the flavour was mild. I also added fresh ginger and extra bell peppers. I added sirachha after serving cuz it needed a kick....but overall was tasty😀
