  • 2/3 cup canned black beans (drained and rinsed)
  • 2 1/4 cups pasta shells (medium dried, I used penne)
  • 1 jalapeno (seeded and diced)
  • 1 tsp. cumin
  • 1/2 tsp. smoked paprika
  • 2 cups low sodium chicken broth

  • 2 cups colby jack cheese (shredded, divided)
