This was great! I used brown rice and cut the liquid way down and it wasn’t mushy at all. We served in flour tortillas and as a topping with tortilla chips.

We were not a fan of this recipie it seemed to be missing something like a pepper to stuff it in or tortilla chips. It came out as a bowl of hot mush. Also salsa from a jar caused a vinegar smell and taste, I would suggest using a fresh salsa.

Delicious recipe, only adjustment made was added another 1/4 cup water. Needed to turn the burner from medium to low while rice cooked.

Slightly altered to ingredients on hand...
My own mexi-meat seasoning, Chicken, Del Monte southwest style can of corn, brooks black bean chili beans, one fresh tomato diced and a half little can of green chilies, leftover COOKED rice, basically the same and ohMAN!!! My boys, 16 & 21 LOVED it! They asked for permission to finish the pan! And asked me to make it again, and often.
Very easy to make and family pleaser, what more could you ask?
