We put a delicious whole-meal spin on the traditional Cajun side dish, which gets its name from the flavorful medley of seasonings that make the white rice look "dirty." Savory sausage and red beans make this version plenty filling, and a touch of cream and melted cheese set it above ordinary weeknight fare. The recipe is a Yummly original created by Sara Mellas.


  • 1 stalk celery (large)
  • 8 scallions
  • 1 green bell pepper
  • 2 tomatoes (medium)
  • 2 garlic cloves (large)
  • 16 ounces Jimmy Dean® Premium Pork Regular Sausage
  • 1 tablespoon paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dry mustard powder
  • 1/4 teaspoon cayenne (or use more or less to taste)
  • 1 teaspoon light brown sugar (packed)
  • 3 cups cooked rice (cold)
  • 14.5 ounces red beans (canned, drained and rinsed)
  • 2 tablespoons heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 2 tablespoons fresh parsley (chopped)

    Delicious!! Could use a little salt ( I forgot to put it in) but highly flavorful. The tomatoes at the end give it a light crisp feeling. There’s a lot of chopping going on but it’s worth it in the end!

    Third time making this, didn’t have a green pepper and substituted red pepper. I still turned out delicious!
    This was so delicious! I'm sensitive to tomatoes and most beans, so I used red peppers and lentils instead and it turned out great. (for the red peppers I followed the instructions for the tomatoes, not the other peppers)

    So this was absolutely yummy. I added more cayenne and used taco seasoning since I didn’t have any cumin. I also added more heavy cream. Definitely will make this again.
