  • 1 small yellow onion (sliced into thin half moons)
  • 16 ounces mushrooms (cut into slices)
  • 4 kale leaves (tightly packed cups baby)
  • 2 cups chopped tomatoes (I used 10 Campari tomatoes cut into quarters)
  • 3/4 cup dry white wine
  • 3 cups cooked quinoa
  • 2 tablespoons fresh herbs (minced, I recommend a mixture of basil, oregano and parsley)

Added dried oregano, salt, pepper, and red pepper flakes. Used spinach instead of kale.

This was amazing! I normally think ground turkey dishes are somewhat bland, but this was definitely not! (I made mine with spinach instead of kale)

This was really delicious! I liked the look of the recipe as is and so I followed directions exactly and it turned out great!
