    I just made this lemon chicken. It was delicious ! I added a handful of mixed lentils, a cup of dry wine while deglazing onions and garlic, 3 tablespoons each of drained capers and kalamata pitted olives, and an extra 1.5 cups chicken stock. Finished with parsley, lemon slices, and a generous handful of feta. Heavenly recipe ! Thank you !

    Saw this in my email box this morning, prepared it for dinner with my Instant Pot, and it turned out great! The recipe works well in an Instant Pot by the way. I used rinsed brown rice, and cooked it on high manual pressure for 22 minutes with quick release. Turned out perfectly!

    I used brown long grain rice and it took nearly 90 minutes. It was so good though. Squeezed lemon over just before serving. So satisfying.

    Loved it! Easy prep and cleanup. I used a whole cut up chicken and added capers. Next time I may add kalamata olives for more Greek flavor

    Was ok. Rice was too oily, and lemon slices made dish bitter. Easily adjusted for next time. If you use whole grain or wild rice be prepared to double cooking time.

    I used brown rice which needs a longer time but still turned out great. probably and extra 15 to 20 minutes and maybe a quarter cup more stock.
