  • 1 pound boneless skinless chicken breast (diced into 1-inch pieces)
  • 4 cloves garlic (minced)
  • 1 tablespoon olive oil
  • 2 teaspoons curry powder
  • 1 teaspoon coriander
  • 1 cup long grain white rice (uncooked)
  • 1 cup chicken broth (I like to use Better than Buillion paste with water)
  • 14 1/2 ounces coconut milk (I like Thai kitchen)
  • 1 teaspoon salt
  • 1 teaspoon minced ginger
  • 2 tablespoons basil leaves (chopped)
