One Dish Baked Chicken and Kale

Ingredients

  • 1 pound boneless skinless chicken thighs (halved)
  • 1/2 head cauliflower (cut into small florets)
  • 1 chorizo sausage (smoked, sliced)
  • 1 red onion (cut into thin wedges)
  • 1 large tomato (cut into wedges)
  • 1 lemon (cut into wedges)
  • 2 tablespoons olive oil
  • 1 teaspoon fennel seeds
  • 5 ounces kale leaves
  • crusty bread (to serve)

Directions

  1. Preheat the oven to 400°F.
  2. Toss all ingredients, except kale, in a large baking dish. Season to taste. Bake 25-30 mins, until chicken is cooked through and cauliflower is lightly golden.
  3. Stir in kale. Bake 2-3 mins longer, until wilted slightly. Squeeze baked lemon wedges over top. Serve with crusty bread.
