  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon salt (for cake)
  • 2 teaspoons ground cinnamon
  • 3/4 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1 cup unsalted butter (softened)
  • 4 cups confectioners sugar
  • 1/2 teaspoon salt
  • 1 cup unsweetened Dutch-process cocoa powder (such as Droste; or use regular unsweetened cocoa)
  • 5 tablespoons bourbon (or other whiskey)
  • 1/4 cup heavy cream
  • 1 tablespoon vanilla extract (for frosting)

    Directions

    1. Preheat oven to 350°F.
    2. Grease pan with cooking oil spray or butter. Line with parchment paper or dust with flour, shaking out excess; set pan aside.
    3. Put oil, brown sugar, granulated sugar, and vanilla in stand mixer bowl or mixing bowl and whisk to combine. (Pro Tip: You'll be making cake batter and frosting in the same bowl, so if you'll be using a stand mixer, start with the bowl here even though you're not using the mixer just yet.)
