Description

- 3 oz. Gruyere cheese
- 2 1/4 cups all purpose flour (for dough)
- 2 tsp. baking powder
- 1/4 tsp. baking soda
- 1 tsp. salt (for dough)
- 1/2 tsp. black pepper
- 3/4 cup heavy cream
- 2 large eggs (for dough)
- all purpose flour (for dusting)
- 1 large egg (for egg wash)
- 1 pinch salt (for egg wash)

Directions
- Seal the butter in a small container and freeze until firm, at least 45 minutes.
- Preheat the oven to 400°F.
- Line a baking sheet with parchment paper or grease with butter.
