Ingredients

  • 1/4 avocado (diced)
  • 1 tablespoon light sour cream
  • 1/2 jalapeno (finely diced)
  • 2 scallions (including the stem, finely diced)
  • 1 tablespoon prepared salsa
  • lime
  • juice
  • 4 eggs
  • salt and ground black pepper
  • 2 teaspoons butter
  • 1/2 cup chihuahua cheese (may substitute mozzarella, shredded)

Directions

  1. Mix the avocado, sour cream, jalapeno, scallions, salsa, and lime together in a bowl.
  2. Whisk the eggs together and add salt and pepper.
  3. Heat a nonstick skillet at medium-high heat, add 1 teaspoon of butter and let melt. Pour the eggs into the skillet and let cook nearly through.
  4. Sprinkle the cheese and half the avocado mixture onto half of the omelette and fold in half. Cook for 20 seconds and place onto a serving dish.
  5. Repeat with the other two eggs.

I had my doubts about this mix, but I was wrong. Avocado is amazing with eggs. This omelet is a bit on the spicy side, which is why the avocado works so well. It’s a huge hit in my home.
