I just made this with several additions I chopped mushrooms, green pepper, onions, tomato and ham in a bowl. Microwaved for 2 minutes. Mixed 3 eggs with a dash of milk and some shredded cheese, little salt. Microwaved for 2 min. then stirred, added little more shredded cheese and continued cooking in microwave for another minute I had cooked 2 slices of bacon and crumbled on top. I am eating it now and it is very tasty. Love all the ingredients. Will surely make it again. Mega stars.

I already make something like this. I layer some shredded frozen potatoes on the bottom. then chopped mushrooms, chopped green onions, a third of a fresh tomato (diced) and anything else I have on hand (turkey sausage, ham, imitation crabmeat). Heat for a minute and a half so potatoes are thawed everything is cooked and hot. I use one egg and two egg whites, and an herb mix called "Herbs of Provence." With the potatoes, I cook it for 3 minutes 20 seconds.

Came across this and thought it was interesting. Then I thought, “Hey, if it works, it sure would be an easy way to make the perfect omelet.” I decided to try it and it really does work. Who knew? The answer has been simple all this time lol. The recipe itself is simple and turns out flavorful. I recommend doing a little salt and pepper to taste, though. Another thing about this is that you can get creative and add in whatever vegetables or other ingredients you would like- as you would with any omelet. Thanks for sharing this nifty idea.
