Ingredients

  • 2 eggs
  • 1 teaspoon butter
  • salt
  • ground black pepper
  • 1 tablespoon fresh parsley (minced)
  • 2 bay leaves (minced)
  • 4 tablespoons cheese (shredded)

Directions

  1. Preheat a greased skillet at high heat.
  2. Stir the eggs in a small bowl.
  3. Add the butter to the skillet
  4. Add the eggs to the skillet, cook for 10 seconds, and move the omelet from the edges using a spatula. Cook for 20 more seconds.
  5. Add the parsley, bay leaves, and cheese to the omelet. Fold it in half and serve.

Omelets can be made out of just egg whites if you are trying to watch your cholesterol. Also, the fillings can be made healthier by using low fat cheese or stuffing them with vegetables or salsa. The puffiness of the omelet depends on the amount of eggs you use, and the size of the pan. Make sure you spray nonstick spray in the skillet before you pour in the eggs. It works better than just butter for preventing the omelet from sticking.
