This Olive, Rosemary, Anchovy Focaccia, Tomato, Mozzarella Sandwich recipe is so rich, decadent, and aromatic, you will want to keep this recipe as a go-to meal for years to come. This recipe combines the saltiness of anchovies and olives with the aromatic decadence of rosemary to create a wonderful heartiness.

Ingredients

  • 20 grams yeast
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 300 milliliters warm water
  • 500 grams flour
  • olive oil
  • 1 can anchovies (long, in olive oil)
  • rosemary
  • black olives (Green and, pitted and sliced)

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. Put yeast, salt, sugar, and half the water in a mixer bowl.
  3. Mix with a fork.
  4. Add flour, knead for 7 to 9 minutes until dough is very soft.
  5. Cover with plastic wrap, and let rise 30 minutes until dough doubles in size.
  6. Spread the dough on a floured rectangular surface to 2.5 centimeters thick. Spread on a baking tray lined with parchment paper.
  7. Pour on 2 to 3 tablespoons of combined anchovy olive oil and olive oil, spread with the back of spoon.
  8. Place anchovies and sliced olives on top. Gently press the topping into the dough with a spoon.
  9. Let rise to double size.
  10. Bake for 25 minutes.
