Olive Oil Crackers


1/2 cup salted butter (softened)
1/2 cup olive oil
2 cups shredded parmesan cheese
1 cup water
1 1/2 teaspoons cracked black pepper
1 teaspoon salt
5 cups all-purpose flour
olive oil
sea salt


1Add butter and oil to Bowl of KitchenAid® Artisan Stand Mixer. Attach Bowl and Paddle to Mixer. Turn to Speed 3 and mix 2 minutes. Stop Mixer and add cheese, water, pepper and salt. Turn to Speed 3 and mix until combined.
2Turn to Stir and add flour gradually. Turn to Speed 4 and mix 2 minutes. Dough will be slightly crumbly. Shape into disc and wrap tightly in plastic. Let stand at least 2 hours.
3Preheat oven to 325°F.Roll out one third of dough to 1/8-inch thickness on lightly floured surface.Brush dough lightly with olive oil and sprinkle with sea salt. Cut into 1-inch circles using round cutter or cut into squares using pizza cutter. Transfer toparchmentpaper-lined baking sheet. Repeat with remaining dough.
4Bake 12 to 15 minutes or golden brown and crisp.
