Description

These no butter olive oil cookies will have you wondering where you can sub in olive oil into your baking on a regular basis. Crisp on the outside and flaky on the inside, these cookies have a hint of lemon. Pull them out of the oven as soon as they turn golden brown for the optimal cookie texture.

Ingredients

2 cups sugar
1 cup olive oil
4 eggs
wheat flour (as needed, About 1 kg)
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 cup brandy (optional)
1/2 lemon peel (zest)
1 egg yolks (for brushing)

Directions

1Preheat oven to 180 degrees Celsius.
2In a large bowl place the eggs and sugar.
3Beat well.
4Add olive oil, lemon zest, cinnamon, and brandy.
5Beat again until the mixture is homogeneous.
6Afterwards, add the yeast, and gradually add the flour until the dough is consistent for molding.
7Make small balls, brush with egg yolk, and place on an oven tray greased with olive oil.
8Bake until browned.
