Had to use a little more zucchini and green beans due to them needing to be used up, but otherwise this recipe is perfect. Tastes almost exactly like my beloved Olive Garden minestrone!

It was an easy, but delicious recipe! I didn’t have all the same ingredients, so I modified with what I had. I also added some cubes of bacon for that bacony flavour. Wonderful!! Will definitely make again

A great copy cat recipe! I added ground beef. Such a great soup. It doesn't keep well more than a couple of days, as the pasta expands and soaks up the liquid. But you're not likely to have much, or any, left by then :)

Normally I just through some minestrone like ingredients into a pot and call it soup. But I needed a recipe I could adapt to use for a LARGE event where multiple people would be cooking. It was a hit. Everyone loved it and now this is my recipe!
