Old Fashioned Peach Cobbler
- Preheat oven to 425 degrees F. In a medium bowl, combine flour, sugar, baking powder and salt. Using a pastry blender or two knives, cut in shortening until mixture resembles coarse crumbs. Gradually add milk, mixing with fork; shape into ball. Remove 1/3 of pastry dough; set aside. On lightly floured surface, roll out two-thirds of pastry dough to in a 10x6-inch rectangle. Place in a 11-3/4 inch x 7-3/4-inch baking dish. Set aside. Meanwhile, in large bowl, combine all filling ingredients except butter. Spoon mixture into pastry; place pieces of butter over top. Roll out remaining dough; cut into 1/2-inch wide strips. Place strips on peach filling to form lattice; trim dough on sides. Bake for 30 to 35 minutes or until pastry is golden brown.
