  • 500 grams daikon radish
  • 1 tablespoon rice (uncooked)
  • 1/2 cup sake
  • 1/2 cup water (the pork belly is cooked in)
  • 3 tablespoons soy sauce
  • 1 tablespoon mirin
  • 2 tablespoons dark muscovado sugar
  • 3 centimeters ginger (sliced)
  • shallots (chopped green, for garnish)

    sweet, yet filling. ginger is a must to balance the sweetness. had to place ginger in water for 20 minutes to take out most of the "bite." it took a while, but the taste of the meat and softness was well worth it. i did use radish and skipped using onions from a different recipe which i will try next time. definitely a dish i will make again.
