  • 1 cup raisins
  • 1/4 cup rum
  • 1/3 cup water
  • 3 cups rolled oats
  • 1/4 cup brown sugar
  • 1/4 cup tahini
  • 2 tablespoons honey (warmed)
  • 1 teaspoon ground cinnamon
  • 1/4 cup pine nuts (toasted, finely chopped)
  • 1/2 cup blanched almonds (toasted finely chopped)
  • 3 tablespoons butter (melted)
  • 1 cup shredded coconut (lightly toasted)

    Directions

    1. Place raisins, rum and water in a saucepan over high heat. Bring to a boil. Reduce heat to moderate. Simmer for 5 minutes or until raisins are plump. Cool slightly. Drain raisins, reserving 2 tablespoons of the cooking liquid. Chop raisins finely.
    2. Combine raisins, reserved cooking liquid, oats, sugar, tahini, honey, cinnamon, pine nuts, almonds and butter in a bowl.
    3. Place coconut on a plate. Using damp hands, roll tablespoons of oat mixture into balls. Roll balls in coconut to coat lightly. Place on a baking sheet lined with parchment paper. Chill for 15 minutes or until firm. Serve.
