  • 1/2 cup quick cooking oats (45g per 1/2 cup)
  • 1/3 cup old-fashioned rolled oats (35g per 1/3 cup)
  • 1 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt (scant)
  • 2 ounces raisins (2oz per 1/2 cup)

    Directions

    1. Preheat the oven to 350°F.
    2. Spray an 8-inch cast-iron skillet with nonstick cooking spray.
    3. Place the softened butter, brown sugar, granulated sugar, and vanilla extract into a large bowl. Use a mixer to cream together the butter and sugars on medium speed for 1 minute, or until pale and fluffy. Add the egg and continue to beat on medium speed for 30 seconds to one minute, until light and fluffy.
