Description

These hearty oatmeal muffins are studded with cranberries for a bit of tartness while the oatmeal will keep you full all morning long. A big batch on Sunday will help you have a healthy breakfast on hand all week long. If you are looking for a healthier dessert these muffins are great with a scoop of ice cream or a light icing.

Ingredients

140 grams flour
100 grams oats
250 milliliters milk
70 grams brown sugar
1 eggs
60 milliliters vegetable oil (or melted butter)
1 1/2 teaspoons baking powder
100 grams cranberries

Directions

1Preheat oven to 425 degrees Fahrenheit.
2In a bowl, mix the sugar, flour, yeast, oat flakes, and cranberries. Make a well in the center of the mixture and add the egg. Mix the milk and the oil in gradually. Once the mixture is smooth, stop stirring. Pour the batter into a muffin pan or small paper baking cups (reinforced to prevent collapse under the weight of the dough). Bake for about 20 minutes.
