Full of warm flavor, these muffins are made with oats for a unique chewy texture and raisins for a burst of sweet flavor in each bite. Made with milk and sunflower oil, these muffins do not require any butter. These tasty muffins will not last long once they have come out of the oven.

Ingredients

  • 140 grams oatmeal
  • 250 milliliters skim milk
  • 250 grams flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 125 grams sugar
  • 200 grams raisins
  • 2 eggs
  • 6 tablespoons sunflower oil

Directions

  1. Preheat the oven to 200 Celsius.
  2. Soak the oatmeal in the milk for 5 minutes.
  3. In a separate bowl, mix together the flour, baking powder, nutmeg, and cinnamon. Add the sugar and the raisins.
  4. Beat the eggs together in another bowl and stir in the oil.
  5. Stir together the oatmeal, flour, and egg mixtures in a large bowl. Pour the batter into muffin tins and bake for 20 minutes.

We liked these muffins better than a similar recipe I have tried. The oatmeal adds a healthy and hearty component and the raisins a nice sweetness. They are almost oatmeal raisin cookie only better!
