It takes 35 minutes to make this tasty treasure that has 350 calories per serving. Ingredients

  • 8 nopals (prickly pear pads)
  • salt
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 onion (small)
  • 1 garlic clove
  • 1 chile pepper (dried chipotle)
  • 4 cups chicken stock
  • 1 coriander (sprig)
  • 3 tortillas
  • 1 strip oil
  • sour cream

Directions

  1. Cut the nopals into small cubes and place them in a pot of boiling water. Remove after two minutes.
  2. Drain the nopal and clean them. Place them in the pot again with new water and cook them with salt.
  3. In a separate pot, add olive oil, butter, and add the onion, garlic, and chipotle pepper.
  4. Once the nopal pieces are cooked, drain them, and add to the second pot with the other ingredients.
  5. Add the chicken stock into the pot along with the coriander. Allow the water boil for up to 10 minutes.
  6. Serve the soup with tortilla strips and sour cream on top.

This is a very well seasoned soup with few ingredients. Besides the broth, there is only the cactus to take bites of. It would be best served along with something a little more substantial for this reason. Quesadillas de pollo would be good with it. If you buy fresh nopal, be careful to use gloves when you're trying to take the sharp points from it.
