Ingredients

  • 1 1/2 cups short-cut pasta
  • 1 tablespoon olive oil
  • 1/2 onions (cut into halves)
  • 1 cup nopales (cooked)
  • 1/2 cup salsa verde (“green sauce”, made with persimmons)
  • feta cheese

Directions

  1. 1Cook the pasta, preferably al dente. Set aside 1/3 of the water used to cook the pasta.
  2. 2In a medium sized casserole heat up the cooking oil and sauté the onions. When the onions begin to turn a bit brown, add the nopal and let them cook for 3-5 minutes.
  3. 3Add the cooked pasta, the sauce, and the water that was set aside onto the casserole. Let everything cook for 2 minutes so that the flavors can mix completely.
  4. 4The pasta is then served with feta cheese on top.
